Today’s recipe is complete comfort food and the perfect dessert as we roll into Spring: Blueberry Pie! Yes, it’s that time of the year when berry prices begin plummeting as they ripen on bushes galore. Around here, I race to one of the many local farmers to stock up on cartons of strawberries and blueberries to turn into treats just like this, and I can tell you… this recipe is amazing! It’s definitely an ugly-delicious sort of dish. It oozes with the juice of blueberries. It’s tart yet sweet, and when paired with vanilla ice cream, (because you know everything is better a la mode), you will absolutely swoon. I promise! ❤
Before we jump into the recipe, let’s take a look at the Tyrian version of this classic dessert. We begin with a bowl of blueberry pie filling….
Blueberry Pie Filling
- 2 cups of fresh or frozen blueberries (thaw if frozen)
- 1/4 cup of sugar
- 1 teaspoon cornstarch
- 1 tablespoon lemon juice
Step 1: Combine the blueberries, sugar, cornstarch, and lemon juice into a bowl. Mix well to combine.
Step 2: Mash the berries just a little bit and then let it sit while you prepare the mini pies.
Mini Blueberry Pies
Makes: 10-12 mini pies
- 2 cups of blueberry pie filling
- 2 refrigerated pie crusts
- 1 egg for an egg wash (optional)
Step 1: Preheat your oven to 375 degrees (F)/ 190 degrees (C).
Step 2: Using a drinking glass or a biscuit cutter, roll out one of the pie crusts and cut 10-12 circles in the dough.
Step 3: Gently press each mini pie bottom into the mini pie pans.
Step 4: Fill each pie with 2 tablespoons of blueberry pie filling.
Step 5: (Optional) Use the other pie crust to cut out your favorite shape to place on top. Brush with an egg wash.
Step 6: Bake in the oven for 18-20 minutes. Serve with ice cream and enjoy!
